Ingredients
Honey Garlic Chicken
2–3 lbs bone-in, skin-on chicken thighs
½ large white or yellow onion, julienned
1 whole bulb garlic, minced
2 TBS vegan butter
¼ cup honey
2 TBS brown sugar
2 TBS smoked paprika
1 TBS garlic powder
1 TBS onion powder
2 tsp dried oregano
½ tsp ground cumin
Vegetable oil
Salt and black pepper, to taste
Ginger Corn Purée
3 ears corn, shucked
1 cup oat milk
½ cup vegan heavy cream
1-inch piece fresh ginger, peeled and finely diced
5–7 sprigs fresh thyme
2 TBS vegan butter
Pinch of salt
Roasted Corn Herb Salad
1 ear roasted corn, kernels removed
1 handful fresh parsley, chiffonade
½ handful fresh basil, chiffonade
½ red bell pepper, finely diced (brunoise)
squeeze of lemon

Instructions
Preheat your oven to 450°F (232°C).
Prepare the corn: Drizzle 1 ear of corn with a little oil and season with a pinch of salt. Place it on the top rack of the oven (or under the broiler) until lightly charred on all sides. Set aside to cool.
Cut the kernels off the remaining 3 ears of corn, reserving one stripped corn cob for the purée.
Season the chicken thighs with the smoked paprika, garlic powder, onion powder, oregano, cumin, salt, and pepper. Drizzle lightly with oil and let marinate while you prepare the remaining ingredients.
In a medium saucepan, combine the fresh corn kernels, oat milk, vegan heavy cream, ginger, thyme sprigs, the reserved corn cob, and a pinch of salt. Bring to a gentle boil, then reduce to a simmer. Cook until the liquid has reduced by about one-third, approximately 20–25 minutes.
Meanwhile, heat a large skillet or sautoir over medium heat with a drizzle of oil. Place the chicken thighs skin-side down, being careful not to overcrowd the pan. Cook until the skin is deeply golden brown and lightly charred, about 6–8 minutes. Flip and cook for another 4–5 minutes.
Remove the charred ear of corn from the oven and reduce the oven temperature to 350°F (177°C).
Transfer the chicken to a plate. Drain about half of the rendered fat from the pan. Add the sliced onions and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for 1–2 minutes. Add the vegan butter, brown sugar, and honey, stirring until the sauce becomes glossy and syrupy.
Return the chicken to the pan, turning each piece to coat it in the honey garlic glaze. Transfer the pan to the 350°F oven and roast for 10–15 minutes, or until the thickest part of the chicken reaches 165°F.
While the chicken finishes cooking, remove the thyme sprigs and corn cob from the corn mixture. Blend until completely smooth, then strain through a fine-mesh sieve. Return the purée to the saucepan, whisk in 2 tablespoons vegan butter, and simmer gently for 10 minutes, stirring occasionally.
Cut the kernels from the roasted corn. Finely dice the red bell pepper and chiffonade the parsley and basil. Toss everything together with a squeeze of fresh lemon juice and a pinch of salt to create the herb salad.
To Plate: Spread a smooth swoosh of the warm ginger corn purée across the plate. Spoon the roasted corn herb salad over one end of the purée. Place the glazed honey garlic chicken on top, then finish with the caramelized onions and a generous spoonful of the honey garlic pan sauce. Serve immediately and enjoy.
