Ingredients

Dough

  • 1½ cups flour

  • ¾ cup warm water (105°F–110°F)

  • ¾ teaspoon salt

  • ½ teaspoon sugar

  • 1 teaspoon active dry yeast

  • ¼ cup olive oil

  • ¼ cup vegan cheddar cheese, shredded

  • ¼ cup vegan mozzarella cheese, shredded

  • ¼ cup vegan parmesan, grated

  • 1-2 fresh jalapenos, thinly sliced

  • Optional: ¼ cup fresh chives, roughly chopped

Instructions

  • In a bowl, pour the warm water, sprinkle in the sugar and yeast, and let stand for 5 minutes.

  • Grate or cube your vegan cheddar and mozzarella, grate the vegan parmesan, slice the jalapeños, and chop the chives.

  • After 5 minutes, add the flour, salt, and 1 tablespoon olive oil to the yeast mixture.

  • Mix with your hands until the flour is absorbed. Cover and let rest in a warm place until doubled in size (about 30 minutes).

  • Preheat the oven to 425°F.

  • Stretch and fold the dough from all four corners, rotating 90° each time. Repeat twice.

  • Add your inclusions (vegan cheddar, vegan mozzarella, vegan parmesan, jalapeños, and chives), reserving a small amount for sprinkling on top.

  • Let the dough rest for 15 minutes.

  • Move the dough to a baking dish brushed with olive oil. Place the dough in the dish, drizzle with olive oil, make dimples with your fingertips, and top with the reserved inclusions.

  • Bake at 425°F for 25–35 minutes, or until golden brown.

  • While still hot, sprinkle additional vegan parmesan over the top and finish with Maldon salt.
